An homage to the 73 neighborhoods of New Orleans, Seven Three Distillery focuses on locally crafted spirits that celebrate the uniqueness of the city where it was founded. Aging bourbon in the humid Louisiana heat adds a whole other layer to the profile of these barrels.
This barrel comes from a blend of Irish and American Whiskey finished in XO Cognac Barrels from France.
Nose: Cream brulee, toasted caramel, and vanilla
Palate: Upfront with caramelized sugars then softens up into custard and vanilla on the mid palate

One of the newest releases from Seven Three Distillery and born from a legend out of Louisiana swamp land about a specific tree– The Whiskey Tree– was where moonshiners and bootleggers would meet up to trade goods that would be brought to New Orleans to be sold. The Whiskey Tree is a high-rye mash bill with a unique smoothness that you don’t always find from those bolder rye spices, while still retaining that full flavor.
Nose: Dark sugars, cola, rye spice, light bubble gum
Palate: Cola upfront, then into soft rye spice, bubble gum undertone

Based in Key West, Florida, and inspired by the life of Ernest Hemingway, the brand focuses on sourcing great juice, mastering finishes, and blending it into exceptional whiskey.
Our final selection from our Hemingway pick from way back in 2024, this rye is finished in Oloroso sherry barrels and comes from both Kentucky and Indiana distilleries.
Nose: Rye spice, hint of lemon zest, bright and light mint
Palate: Lemon undertone, rye spicy tea

Located in Jackson, Mississippi, Cathead Distillery is the first legal distillery since Prohibition. The brand got its start by sourcing high-rye MGP and aging it in the southern heat, creating some exceptional bourbon. Rooted in southern jazz culture, Cathead’s own juice is beginning to enter the market, marking an exciting time for the brand.
To our knowledge, these two barrels are the only cask-strength single-barrel Old Soul Wheat Whiskey on the market. With no wheat whiskeys coming out this year, this is your last chance to snag some history before you have to wait.
Nose: Sweet wheat, a little wheat funk, and dusty oak
Palate: A little dry, thick, and viscous, sweet wheat funk

Located in downtown Jackson, Mississippi, Cathead Distillery is one of the South’s few large-scale distilleries. Recently, it began releasing its whiskey produced in-house. These high-rye mashbills come from MGP but are aged in the southern heat.
This is our last single barrel from this lot of barrel picks that took place at our second-ever Distillery Takeover, all the way back in 2024! At that same event, we dropped two other barrels, including a three-barrel blend, our first-ever Brewzle Blend release.
Nose: Classic Kentucky bourbon, dark caramel, baking spice
Palate: Caramel forward, soft oakiness in the middle, a little powder sugar, and dry oak on the finish

Operated by the Huber family, Starlight Distillery could be called one of the largest small distilleries in the country. The farm produces everything from whiskey to pumpkins, and the brand has no limits on what it is willing to create using finishes or blends.
I know, you’ve seen Starlight barrels in almost every drop for the last year. We did do some damage to Starlight back in 2024. However, this barrel is from a completely separate pick TJ did last year. While the experiment we did won’t ever see the light of day, this Calvados single barrel came from that!
Nose: Very sweet, bright fruit
Palate: Light classic bourbon notes with extra sweetness

Located in Nashville, Tennessee, Southern Collective should be a stop for anyone visiting the area. Their stock of sourced barrels from all over the country, some with unique finishes and experiments, makes for a fun time trying through them all.
This rye, picked by resident community rye expert JRock, has been sitting in our back stock for quite some time. Now that it’s finally made its way to the front of the line to be dropped, it can be yours today!

Based in Columbus, Ohio, the regional brand is working to own its backyard, growing to meet demand as a small craft producer in a region not really known for its bourbon.
The industry-standard way to proof down whiskey is to put it in a tank, do some math, and add the correct amount of water to hit the desired proof level. But that does a lot of bad things to the whiskey in the process. Fatty acids are killed, heat is produced, and a lot of chemistry stuff we're not qualified to talk about.
What we are qualified to talk about is good whiskey. Watershed made a switch in its proofing process that has drastically improved the end product. "Slow Water Reduction," a process common in brandy and cognac production, is the slow addition of water to your spirit over time to lower the proof.
Normally, you don't get to try the same whiskey using both methods, but Watershed only just recently made this change for its Small Batch Bourbon. We've bundled the two versions together for you to try both. It's a rare opportunity to get a little nerdy and try something you can't find anywhere else.
